I was first introduced to this easy-to-make yummy salad years ago by my Israeli co-teacher. I had never even tried hearts of palms before this recipe and now I'm obsessed. When we would serve this at parties everyone was a buzz with how delicious it was and I hope you enjoy it too!


1 can Hearts of palm

1 can of corn (you can use fresh or frozen corn also)

1 avocado

1 tablespoon mayonnaise

1 lemon

salt & pepper to taste


  1. Cut Hearts of palm into small discs

  2. Cut avocado into chunks

  3. Add Hearts of palm, corn and avocado chunks to a bowl

  4. Stir in mayonnaise and the juice of one lemon

  5. Add salt and pepper to taste and enjoy!

After earning a Bachelors of Science from Sonoma State University, I took time to travel, live in the mountains , and raise three beautiful children. My professional life has taken many different turns, but has always been rooted in non-profits that serve vulnerable and often underserved individuals.

Through my work, education and personal experience I have gained extensive knowledge and understanding of the family court system. I have seen first hand how serious issues such as domestic violence, high conflict custody battles, and addiction hurt families. This yummy vegetarian recipe was first given to me 11 years ago at my bridal shower by my childhood friend Kimmie! (Shoutout to Kimmie who just became a Mommy last month!) This recipe has been my go-to ever since for a hearty, yummy, quick thing to make that everyone will love. I drop it off for friends after babies are born because it's easy to heat up and enjoy afterwards for leftovers. Check out the same recipe I use from Eating Well recipes.
